Though grilled lettuce might sound unappetising, grilled little gem has the texture of pak choi with a subtle buttery flavour and is delicious!
2 heads Little Gem Lettuce
A big swig of sunflower oil
A big pinch of salt
Seasoning- I've used a Japanese 7 spice seasoning but use anything that compliments your meal
Method Set your grill on a high temperature. Cut the lettuce heads each into 4 parts lengthways and place into a baking dish. Sprinkle over salt and seasoning and drizzle with oil. Grill for 5 minutes, then remove from the grill and move the pieces of lettuce around gently, flattening them gently to create more surface area for grilling. Return to the grill, remove when the pieces are golden brown (5 - 10 minutes more) and serve immediately.
