An essential part of french cuisine, celery is used as a flavour base (mirepoix- thanks Surya!) for so many dishes. Organic celery like ours is so potent that you don't need a lot to add that depth of flavour to your meals. That's why it's perfect for dehydrating- a process that sounds like hard work but is really really easy!
Celery herb- Pick the leaves from the celery stalk and space on a baking tray. Cook in the oven on 80ºC until dry (around 1 hour), then blend or grind in a pestle & mortar and store for up to 1 year. Celery salt- Cut the stalks of the celery into thin strips and space on a baking tray. Cook in the oven on 80ºC until dry (around 1 hour), then blend with good sea salt or Maldon salt and store for up to 1 year.
